Inspired by Victorian refinement, and France’s ‘La Belle Époque’ period, ‘Let Them Eat Cake!’ features the highest-quality loose-leaf teas, as well as sweet and savoury delights whose ingredients have been sourced from local purveyors that pride themselves on ethical, sustainable practices.

Served every Saturday and Sunday, HTL’s tea service includes loose-leaf teas and a new ‘Bayshore Breakfast Signature Blend’ supplied by Vancouver’s own O-Five Rare Tea as well as TEALEAVES, each of which sources its teas from the best and most ethical sources on the planet.

More than two dozen teas are available to delight every taste, from black and green teas to white, oolong and tisane selections.

Whether hand-rolled jasmine pearls from Japan, Cascadian peppermint from Washington State or Tie Luo Han oolong from the Wuyi Mountains in China, these are teas to be savoured slowly as their complex flavours and aromas fill your senses.

Complementing these teas is a lavish array of delectable bites created by HTL’s passionate culinary team led by Executive Chef Steve Rutherford and Pastry Chef Martha Ebro.

Choose from signature Bayshore Honey, Lavender & White Chocolate Scones with housemade clotted cream; Chocolate Dome with Valrhona Guanaja 70% dark chocolate mousse and crunchy hazelnut glaze; and “Eton Mess” Cheesecake with raspberry meringue, Chantilly cream, and edible flowers from BC’s own Barnston Island Herbs.

On the savoury side, mini blinis with smoked Pacific Sockeye salmon and Northern Divine caviar are the epitome of Pacific Northwest flavours; while finger sandwiches of local baby cucumber, dill-and-chive cream cheese and cracked pink peppercorn tip their cap to this classic tea service.
 
HTL has sought out the best purveyors in the region for each scrumptious menu item, sourcing caviar from the Sunshine Coast’s Northern Divine, organic eggs from Richmond’s Rabbit River Farms, and freshly baked breads from Vancouver’s own La Baguette & l’Echalote.
