COFU Chinatown offers a unique, plant-based dining experience inspired by Zen philosophy and Japanese culinary traditions.

Located in the heart of Vancouver’s Chinatown, the restaurant celebrates natural harmony through seasonal menus that highlight both simplicity and artistry.

Guests may choose the omakase counter for a curated progression or enjoy à la carte dining in a relaxed setting.

This location marks the brand’s second location in Vancouver, with COFU Pressed Sushi dedicated to vegan sushi just outside Granville Island.
The cocktail list is as inventive as the food. The Brine & Blossom combines gin, Japanese sake, ginger, yuzu, and red cabbage brine, resulting in a vibrant drink that balances citrus and savoury notes.

From their à la carte dining, we tried the Signature Vegan Eel, created with eggplant and finished with sansho pepper for a light citrus accent.

The Pine Bento brought variety with pouch sushi in Chilli Con Carne, Mix Mushroom, and Short Rib, along with appetizers such as Tofu Quiche, COFU Gomae, and Parsley Tofu Lemon.

Veggie skewers were served alongside, followed by dessert featuring housemade red bean paste and mochi.

The menu also includes shareable, playful dishes like Caramel Potato, which balances sweet and savoury flavours, and Baked Potato Teriyaki Poutine, a creative take on the Canadian classic with Japanese elements.

The dining room’s calm design reinforces the restaurant’s philosophy, with natural materials and understated decor that keep attention on the food and drinks. Each dish demonstrates a careful balance of texture and flavour, offering a thoughtful reimagining of Japanese cuisine through a plant-based perspective.
