MICHELIN-starred Burdock & Co has partnered with Swallow Tail Culinary Adventures to host a seasonally-inspired dining experience on Thursday, May 23. An ode to spring in the Pacific Northwest, the five-course dinner features a symphony of flavours foraged from BC’s wilderness and waters.
Chef Andrea Carlson, owner of Burdock & Co, Bar Gobo and Harvest Community Foods in Vancouver, and Chef Robin Kort, owner of Swallow Tail Culinary Adventures, are pioneers in farm-to-table dining. For this collaborative culinary experience, the powerhouse duo are combining their expertise and creative skills to design a dinner with artful dishes whose presentation and taste will transport diners’ tastebuds through a whimsical spring journey. Ingredients that will be incorporated include seaweeds smoked over arbutus wood; birch leaves; sea urchin butter; and wild sheep’s sorrel.
A masterful forager, Chef Robin shares Chef Andrea and her team’s passion for homegrown food. Through Swallow Tail Culinary Adventures, Robin collaborates with local experts – from chefs to mushroom hunters – to facilitate tasting adventures and foraging events that showcase BC’s wild side. Her passion is connecting the dots from wilderness to plate to share with her guests the most delicious secrets harboured by nearby forests and seas. She is also an advocate for sustainable land use, encouraging fellow harvesters and foragers to take only what is abundant, and leave the rest for other beasts.
Burdock & Co and Swallow Tail Culinary Adventures’ collaborative dinner takes place on Thursday, May 23, with seatings available at 5pm and 8pm. Tickets cost $150 per person (excluding tax and gratuity) and include a five-course tasting menu. Guests also have the option of adding expertly curated wine pairings to enhance their meal.
