Nightshade restaurant and BC-based tofu producer oomé are collaborating on a special Earth Day menu on Saturday, April 22.

The five-course tasting menu will feature oomé products, including their new Seven Spices Tofu, a tofu flavour created specifically for the Nightshade kitchen. 

The five-course menu will include Nightshade’s Signature Snacks; Tempura Sushi Roll with Sweet Potato, Shoyu Roasted Pepper, Gochujang Aioli, and Greek Tofu; Cambodian Hot & Sour Soup with Jackfruit Dumpling, Squash, and Seven Spices Tofu; Jerk Mushroom Pithivier featuring Local Greens, Fresh Truffles, Berry Peppercorn Jus and Maple Soy Tofu; and for dessert, Eaton’s Mess, made from Aquafava Meringue, Oatmeal and Coconut Ganache, Ume, and Seabuckthorn Berry Sorbet with unseasoned tofu.

In addition to commemorating Earth Day, the evening will also be a special occasion for oomé: The company is celebrating its one-year anniversary this April.

The food manufacturer is known for making a variety of flavoured tofu that are ethically produced and locally sourced.

The products are currently available in over 75 stores throughout the province.

Current flavours include Greek, Just Smoke, and Maple Soy.

Although the tasting menu is available for one night only, Chef Yen incorporates oomé’s Seven Spices Tofu in select dishes throughout the spring.

It’s featured in the Cambodian Mee Kola Noodles, available on the brunch and lunch menu and the Tempura Sushi Roll found on the dinner menu. 

On April 22, the Nightshade patio will be open from 5 pm to 8 pm.

The Earth Day collaborative menu is only available at the 8 pm seating.
