Lorette Brasserie has officially opened in Whistler’s North Village, bringing a blend of French and Québécois culinary traditions to 102B–4359 Main Street inside the Summit Lodge Boutique Hotel.
Operated by the Paré Restaurant Group—known for Quattro and Caramba—this new 90-seat brasserie is a personal project for co-owners Jay Paré and James Paré, named in honour of two generations of women in their family.

The breakfast and brunch menu, available daily from 9 AM to 1 PM, features dishes like Croque Madame, Brioche French Toast, and four styles of Eggs Benedict. Dinner service, starting at 5 PM, features a rich selection of hors d’oeuvres and mains rooted in classic French techniques.
Evening menu highlights include Creton, Ahi Tuna Tartare, Onion Tarte Tatin, Coquille St. Jacques, Lobster Vol-au-Vent, Beef Cheek Bourguignon, and Suckling Pig Tourtière. Many dishes feature local ingredients, house-cured elements, and seasonal produce.
Executive Chef Shane Sluchinski leads the kitchen with a focus on traditional recipes he grew up with in Québec. His cooking style draws inspiration from time spent learning from his French-Canadian grandmother and his years in professional kitchens from Chambly to Whistler.
The cocktail list includes the Frozen Vesper, Sazeracs on tap, Montreal Margarita, and the Lorette Fizz. The wine list features both French and BC selections, alongside local and imported beer.
