Fairmont Pacific Rim has introduced a new chef collaboration series at their The Lobby Lounge & RawBar, bringing together globally recognized culinary talent for a sequence of intimate omakase dinners in Vancouver.

The series features one-night-only experiences with limited seating of 40 guests per evening. Each dinner is led by Chef de Asian Cuisine Youssef Jbari alongside a guest chef, with menus that focus on seasonality, precision, and cross-cultural technique.
Masayoshi Baba Returns for Opening Dinner
The inaugural dinner will feature Michelin-starred chef Masayoshi Baba of Masayoshi, marking a return to the venue where he previously held a residency. The collaboration presents a six-course omakase menu that blends Japanese technique with Nikkei influences, reflecting both chefs’ shared approach to craftsmanship and ingredient-driven cooking.
Guests can expect a progression that highlights refined flavours and thoughtful composition, with each course designed to build on the last. The experience is priced at $189 per person, with reservations available through the hotel.
Upcoming Collaborations Highlight Vancouver Talent
The series continues with Chef Riccardo Valvedere of UCHU Cevicheria & Raw Bar, known for a vibrant interpretation of Peruvian cuisine. This dinner explores the intersection of Japanese and Peruvian traditions, offering a menu shaped by bold flavours and contrasting textures.
The final event will feature Hyunki Shin of Sushi Bar Shu, bringing another perspective from Vancouver’s sushi scene to conclude the series.
