C|Prime Modern Italian Steak & Wine Executive Chef Behshad Zolnasr is adding an array of delicious, seasonally inspired spring dishes to the lunch and dinner menu at the upscale dining hotspot in the heart of the iconic Century Plaza Hotel (1015 Burrard Street).

Available daily starting at noon, the new C|Prime Spring Menu features starters and antipasti like Prawn Louis (bacon, egg, cucumber, heirloom tomato, pickled onion, avocado, Thousand Island) and Classic Beef Tartare (Pecorino, charred sourdough) and show-stopping mains such as the C|Prime Seafood Platter (one dozen oysters, grilled tiger prawns, Ahi tuna tartare, Steelhead crudo, marinated mussels, Dungeness crab salad) and Mint Ricotta & Pea Basil Doppio Raviolo (lemon beurre blanc, Pecorino).

The full menu of new dishes making their spring debut at C|Prime include:

Antipasti

  • House Marinated Olives;
  • Prawn Louis (bacon, egg, cucumber, heirloom tomato, pickled onion, avocado, Thousand Island);
  • Fried Pork Rillette (house-made mustard, herb salad);
  • Ahi Tuna Tartare (sesame, soy, avocado, taro chips);
  • Calamari (dill, lemon-shallot aioli);
  • Beef Carpaccio (Parmesan aioli, crispy capers, roasted pine nuts, cured egg yolk);
  • Beef Tartare (classic fixings, Pecorino, charred sourdough);
  • Chicken Liver Mousse (mostarda, pickled mustard, pear purée, grilled sourdough).

Pasta

  • Dungeness Crab Tortellini (lobster cream);
  • Mint Ricotta & Pea Basil Doppio Raviolo (lemon beurre blanc, Pecorino);
  • Cheese Agnolotti (basil pasta, Marinara, Burrata); 
  • Funghi Risotto (foraged mushrooms, arugula);
  • Bolognese (beef ragu, porcini mushrooms).

Mains

  • Steelhead Salmon (pea & basil purée, morels, confit potato);
  • Chicken (chestnut bisque, confit garlic mash, glazed turnips, spring peas); 
  • ½ lb. Prime Burger (caramelized onions, brioche bun, cheddar, bacon, house B&B pickles); 
  • Steak & Caesar (potato rösti, grilled romaine, pancetta, demi-glace, charred cream);   
  • C|Prime Seafood Platter (one dozen oysters, grilled tiger prawns, Ahi tuna tartare, Steelhead crudo, marinated mussels, Dungeness crab salad).

The new menu also features gourmet sides such as Confit Garlic & Rosemary Mashed Potatoes, Roasted Potatoes (smoked shallot vinaigrette, bacon, crème fraîche); Truffle Mac & Cheese (Gruyere, pangrattato); Creamed Spinach, Maitake Mushrooms (garlic cream) and Honey Glazed Carrots that offer the perfect complement to any dish.

C|Prime’s Daily Happy Hour Menu from 4 to 6 p.m. also gives guests a good reason to swing by and get the night started on the right foot with a variety of specials on house cocktails, beer, and wine as well as snacks such as Truffle Popcorn, Cajun Chips, Fried Chicken Thigh with Maple Sriracha, Confit Pork Belly with Truffle Honey and Calamari with Tarragon Aioli.
