From matcha-infused beer and strawberry slush to delicate sushi rolls and afternoon tea, these offerings reflect the spirit of spring in Vancouver.
The Sandbar brings a Japanese influence with their Sakura Roll, a blend of avocado, fresh crab, scallop, and sockeye sashimi topped with tobiko and mayonnaise. Paired with the Sake Sangria, a light mix of orange juice, sake, plum wine, and triple sec, the menu runs through April 28.

CoCo Bubble Tea YVR is welcoming cherry blossom season with the debut of its Lychee Series, available across Metro Vancouver locations throughout April. These limited-time drinks blend fruity and floral notes, capturing the spirit of spring in both taste and appearance. Two new beverages headline the Lychee Series. The Pink Blossom ($7.60) is a strawberry, lychee, and rose smoothie with a subtle floral profile and a soft pink hue. The Lychee Iced Tea ($7.20) combines lychee and green tea with the brand’s new tea jelly for added texture and refreshment.

At Sweet 7, two drinks highlight strawberry and coconut. The Strawberry Coconut Bliss combines strawberry slush, coconut cream, and jelly, while the Strawberry Coconut Candy features handmade strawberry cheese foam, coconut water, and strawberry chunks. These drinks are available at both Vancouver and Richmond shops until April 27.

Mon Paris Patisserie offers seasonal Cherry Blossom and Strawberry Macarons. A portion of proceeds from Macaron Day sales will be donated to charity, connecting flavour with community impact.

At The Victor, the limited menu from March 28 to April 23 includes the Cherry Blossom Roll, Chilean Sea Bass, and Sakura Matcha Mousse Cake. Drink options include the Kyoto Matcha Biru, Sakura Club, and Hampton Spritz, alongside pours of Hampton Water Rosé from France.

Fable Diner keeps it casual with three cherry-inspired beverages. The Cherry Mimosa, Cherry Milkshake, and Cherry Bourbon Sour each use house-made cherry syrup for consistency across the drinks menu. Available until April 30.

At Mèreon Bistro, the Cherry Blossom Cocktail is the seasonal feature. Combining vodka, Chambord, cranberry juice, lemon, and rose water, the drink is finished with orange bitters and served through the end of April.
