The apron at the Westin Wall Centre Vancouver Airport in Richmond has introduced a new fall and winter menu led by Executive Chef Clement Chan. Open daily from breakfast through dinner, the restaurant offers West Coast-inspired dishes prepared with a modern approach, highlighting sustainable ingredients sourced from BC farmers, foragers, and fishers. All menus carry Ocean Wise recommendations.

Here’s what we tried:
Grilled Caesar Salad – Baby gem leaves, croutons, crostini, anchovies, crispy capers, furikake, buttermilk dressing

Burrata Salad – Burrata, grilled stone fruit, heirloom tomatoes, radish, sesame seeds, tarragon vinaigrette, bread

Beef Tartare – Smoked aioli, cured egg yolk, rice paper, chives, cornichons, capers, shallots


Black Cod (Ocean Wise) – Parsley velouté, leeks, celery root, green beans, zucchini

Pacific Salmon (Ocean Wise) – Extra virgin olive oil-compressed fennel, cauliflower, dashi beurre monté

Frutti di Mare (Ocean Wise) – Hand-rolled pappardelle ripiene, seafood medley, seafood mousse, scallops, pickled symphony tomatoes, chilli oil, tomato nage

Duck L’Orange – Seared duck breast, fondant potatoes, baby beets, citrus reduction

Ragù Bianco – Handmade tagliatelle, pork, fennel, broccoli rabe, pancetta, reggiano emulsion, herb oil

Forage Mushroom – House-made gnocchi, local mushrooms, espuma, truffle, grana padano

Earl Grey Crème Brûlée – Earl Grey custard, caramelized glass

My favourites were the Grilled Ceasar Salad, Beef Tartare, Pacific Salmon, Handmade tagliatelle and Earl Grey Crème Brûlée.
