The Apron at the Westin Wall Centre Vancouver Airport is introducing Executive Chef Clement Chan along with new fall and winter menus that reflect West Coast flavours rooted in sustainability. Located at 3099 Corvette Way in Richmond, the restaurant is open daily for breakfast, brunch, dinner, and Happy Hour.

Chef Chan, a Vancouver-born chef with two decades of experience, is known for co-founding the Le Tigre food truck, launching Michelin-recommended Torafuku, and most recently leading the kitchen at Michelin-recommended Archer. His culinary background includes appearances on Food Network shows such as Chopped Canada and Top Chef Canada.
The new menus feature classic dishes with a modern approach. Breakfast options include Pork Benny, Mushroom Benny, Avocado Toast, and Egg White Frittata. Brunch items range from Smoked Salmon Dutch Baby and Mushroom Gnocchi to The Wall Smash Burger and Cajun Chicken Burger. Dinner selections include Wagyu Tartare, ’Nduja Prawns, Pacific Salmon, Black Cod, Frutti di Mare, and Duck L’Orange.
Cocktail offerings are crafted with premium spirits and fresh ingredients. Notable drinks include the Tomato Gimlet with olive-washed gin and fresh tomato nectar, Sunset Sunrise with rum and tropical juices, and the dessert-inspired Strawberry Cheesecake cocktail.
Happy Hour runs daily from 2 to 5 p.m. with drink specials starting at $6 and food offerings such as Brussels Sprouts & Cauliflower, Chicken Wings, and The Wall Smash Burger.
