Coast, Fable Kitchen, C|Prime, and more are putting fresh halibut on the menu this spring with a mix of happy hour specials, seasonal tasting menus, and chef-driven features. Here’s a look at what’s available across Vancouver for halibut season.

Coast
Coast has added several halibut options to their Happy Hour menu, available daily from 2:30 PM to 5:30 PM, with extended hours on weekends starting at 11:30 AM. The Halibut Ceviche includes tequila and lime cilantro with tarot root chips. The Halibut Fritters are corn breaded and served with capers and a spicy tomato sauce. The Halibut Popcorn comes seasoned with cajun spice, lime, and old bay aioli. Each dish is priced at $16.
Fable Kitchen
Fable Kitchen is offering a Three-Course Tasting Menu through April 30 for $55 per person. The main dish is Steamed Halibut with miso roasted carrot, potato rosti, and brown butter. Wine pairing is available for an additional $25 and includes Winemakers Cut Grüner Veltliner.
C|Prime
C|Prime presents a new seasonal dish by Chef Behshad. The Halibut is served with smoked carrot purée, pea and fava ragu, pancetta, grilled romaine, and beurre blanc.
Fanny Bay Oyster Bar and Shellfish Market
Fanny Bay Oyster Bar is currently rotating their BC Halibut feature on the fresh sheet, based on chef’s daily catch. The halibut can also be substituted into the fish and chips when available. Fresh halibut filets are sold through their retail store.
Five Sails
Five Sails has added a new item to their spring menu. The Poached Pacific Wild Halibut is served with local caviar, allium espuma, aromatic fumet, new potato brandade, and asparagus.
Mereon Bistro
Mereon Bistro will be serving halibut throughout the season in various preparations led by Chef Ameer. Details will rotate regularly based on seasonal ingredients.
Teahouse
Teahouse is serving Crab & Shrimp Crusted Halibut with chimichurri fingerling potatoes, garden vegetables, and lemon caper butter sauce.
Seasons in the Park
Seasons is featuring Local Halibut with a blistered tomato crust, parmesan fingerling potatoes, seasonal vegetables, and lemon butter sauce.
Sandbar
Sandbar is offering Wood Grilled Haida Gwaii Halibut with coconut jasmine rice, market vegetables, and lemon caper beurre blanc.
