UMAMI brings together Chef Will Lew, Oyster & King, Pallet Coffee Roasters, and MAMAintheKitchen for a one-night dining experience on Tuesday, April 26 shaped by nature, memory, and creativity. This intimate event in Vancouver invites guests to experience a 12-course journey where mushrooms, coffee, and umami come alive in unexpected ways.

Rooted in the cycles of earth and rebirth, the menu pays tribute to how ingredients nourish growth, carry stories across generations, and inspire fresh expressions of heritage. Chef Will Lew draws on personal connections to his grandfather’s traditions, creating a night where every course reflects a deeper respect for nature’s rhythms.

The evening begins with a reception of two courses, followed by an eight-course seated dinner, and finishes with two dessert courses. Each dish captures a distinct moment—some bold and stirring, others grounded and contemplative. Flavours unfold with intention, offering a sensory narrative that moves from fire and forest to memory and craft.

Guests will be seated for a thoughtfully paced experience with tableside storytelling, paired cocktails, and design elements evoking nature and modernity. Doors open at 6 PM, with seating beginning at 7 PM.

The cocktail program, curated by Josh Dunn, features a custom menu dedicated to the evening’s theme, blending bold spirit-forward creations with refreshing notes, each crafted to complement the layers of the dinner.

Chef Will Lew brings decades of experience from Michelin-recognized kitchens and a long-standing commitment to sustainability through Ocean Wise. Oyster & King supplies local chefs with premium cultivated and wild mushrooms. Pallet Coffee Roasters focuses on ethically sourced beans and expert roasting, led by Coffee Director Ben Rugg. MAMAintheKitchen shares heartfelt flavours inspired by family memories, brought to life through nostalgic sauces and condiments.

Months of collaboration, ingredient sourcing, and refinement have gone into shaping UMAMI into a night where food, craft, and nature speak together.
