UCHU Cevicheria & Raw Bar is a newly opened modern seafood restaurant in Vancouver’s Chinatown led by Chef-Owner Ricardo Valverde, whose team also operates the MICHELIN-recommended SUYO Modern Peruvian.

The restaurant highlights the coastal flavours of Peru through ceviches, tiraditos, raw bar offerings, and more.

The menu is complemented by a pisco-driven cocktail program and a wine list featuring producers across the Americas.

Set in the restored heritage Sai Woo space and centred around an open kitchen and raw bar, UCHU offers a welcoming dining experience focused on fresh seafood, sustainability, and contemporary coastal cuisine.
