The Victor will transport guests back to the era of vibrant disco beats and brunch faves when the downtown steakhouse starts spinning its new Disco Brunch services this Sunday, August 20 and help oyster lovers indulge their half-shell desires with new daily Shucks at the Bar features now available on the Happy Hour menu.

Taking centre stage every third Sunday from 10 a.m. to 2:30 p.m., The Victor’s all-you-can-eat, buffet-style Disco Brunch brings the past into the present and serves up brunch favourites with a side of vibrant disco beats as DJ George V kicks it of spinning vinyl on the turntables.
Available for $85 per adult and $40 for kids from 4 to 12, Disco Brunch will showcase a feast fit for a disco kings and queens via a Beef Carving Station spectacle, a treasure trove of sushi creations and fresh oysters for seafood aficionados at a Sushi and Oyster Station, true Charcuterie bliss with artisan cheeses and cured meats and a party that continues well past the main course thanks to a delectable array of Desserts and Candies to satisfy every guest’s sweetest cravings. Disco costumes are encouraged.
The Victor has also added a new element to its daily Happy Hour offerings with its new Shucks at the Bar features now available Mondays through Saturdays from 5 to 7 p.m. and Sundays from 3 to 7 p.m.
Shucks at the Bar lets guests learn the fine art of oyster shucking while enjoying $2 oysters, sample seafood delights and complimentary saké shots and sip feature drinks while soaking in the sweeping views of the city and skyline from Victor’s sixth-floor perch atop Parq Vancouver.
The Shucks at the Bar food menu showcases an array of signature creations from Victor’s elevated raw and sushi bar that include:
- Salmon Ceviche (ikura, cucumber, sweet peppers, Serrano chilis, taro chips);
- Hokkaido Scallop Ceviche (yuzu dressing, lime zest, pink peppercorn, yuzu tobiko, taro chips);
- Aburi Beef Tataki (ponzu sauce, garlic chips, wasabi pickles, daikon, sesame seeds);
- California Roll (Dungeness crab, avocado, cucumber, masago, yuzu mayo);
- Spicy Tuna Roll (Ahi tuna, scallion, cucumber, sesame chili sauce);
- Dynamite Roll (tempura shrimp, avocado, chive, mango sauce, shichimi pepper);
- Crispy Salmon Rice (avocado, serrano, unagi sauce);
- Victor’s Seafood Platter (East & West coast oysters, jumbo prawns, scallop ceviche, bluefin tuna poke, gringo salmon aburi skewers, togarashi nori, taro chips);
- Caviar Selection (Northern Divine, Servuga, Osetra or Beluga, served with blinis, chives, egg, red onion and crème fraîche);
- East & West Coast Oysters: Cloudy Bay, Fanny Bay, Kusshi, Sunseeker (BC), Shigoku (WA), Riptide Point and Malpeque (PEI).
The Shucks at the Bar beverage list also showcases a Martini Bar menu that offers five inspired twists on the classic libation, Old and New World wines, Champagne and sparkling available by the glass and bottle, and a spotlight on sakés from artisan breweries like Okunomatso, Momokawa and Asahi Shuzo.
