New Bistro Concept in Vancouver – Elysees Café & Bakery

Elysees Café & Bakery has launched a nighttime bistro concept, bringing French and Mexican influences to the menu. The bistro runs Wednesday to Sunday from 5 pm – 10 pm.

Chef-Owner Diego Delgado focuses on seasonal ingredients and bold flavours and you can expect the menu to change seasonally.

The beef tartare was well-balanced, with bright acidity from the caper dressing and richness from the poached egg and shaved raclette. The smoked pepper emulsion added depth, and the crispy tortilla julienne gave it a nice texture.

The duck confit cassoulet was hearty and comforting, with tender white beans and a smoky guajillo glaze.

The 10-ounce striploin was cooked perfectly medium-rare, and the mole demi-glace brought a deep, savoury complexity. Caramelized hazelnuts and pomegranate added sweetness and crunch.

For dessert, “What Shayde Wants” (Shayde is the in-house Pastry Chef) was a delicate white chocolate mousse vanilla sponge cake with raspberry. Light, creamy, and just the right amount of sweetness to end the night.

For drinks, I had a lovely yuzu tea with mint.
