Loam Bistro in North Vancouver is launching a new weekend Summer Pasta Pop-Up, beginning Friday, July 18. Known for its daytime brunch menu, the Lower Lonsdale favourite will now offer an Italian-inspired evening dining experience every Friday and Saturday from 5 to 9 p.m., featuring hand-made pasta, antipasti, and dessert.

Chef and co-owner Rahul Negi draws from his fine-dining background, including time at Joe Fortes and Robba di Matti, to present a menu blending West Coast ingredients with traditional and modern Italian preparations. Starters include Heirloom Burrata Caprese, Grilled Peaches & Prosciutto, and Roasted Bell Pepper & Anchovy Bruschetta.
The pasta selection spans comforting and inventive dishes such as Rigatoni alla Bolognese, Spaghetti Carbonara, Truffle Mushroom Risotto, Gnocchi Romesco, and Calabrian Prawns Rigatoni, with unique offerings like Gochujang & Burrata Gnocchi adding a bold twist. Sweet endings include Mango Tiramisu and a Pistachio-Crusted Poached Pear.
The menu will be complemented by a curated wine and sparkling wine selection from Vancouver-based Sansorium, with a focus on low-alcohol and zero-proof options. Selections from Edenvale, Leitz, and Le Petit Chavin are featured, with more traditional wine additions planned as the pop-up continues through the summer.
Loam Bistro, located at 230 Esplanade West near Lonsdale Quay, opened in fall 2024 and has since earned the title of Favourite New Restaurant in the 2025 North Shore News Readers’ Choice Awards. The restaurant’s bright and plant-filled interior reflects the relaxed North Shore lifestyle and serves as a backdrop to its evolving evening concept.
