Jinya Ramen Bar has introduced some new Chef’s Specials this Spring with a focus on comfort-driven flavours and well-executed ingredients. I visited their Downtown Vancouver location to try these offerings.

The new Tokyo Tonkotsu Ramen ($18.80) brings a deep, savoury broth that doesn’t overwhelm. The pork chashu is tender with a nice ratio of fat to meat, while the seasoned egg adds richness without being too salty. Thin noodles offer a clean bite and hold up well in the broth without turning soggy. The fish powder provides an umami edge that lingers nicely.

The Chicken Salad ($8.80) is straightforward but well-prepared. The chicken is moist and lightly seasoned, pairing well with crisp cucumber and red onion. The creamy sauce ties everything together without feeling heavy. Crispy wonton chips add both texture and a slight nuttiness, making it a solid side or a light meal.

The Matcha Lychee Lemonade is refreshing with a slight tang. The matcha brings an earthy depth, while the lychee adds subtle floral notes. It’s a good palate cleanser between bites of the heavier ramen.
