Created in partnership with Beam Suntory, the HIBIKI experience draws inspiration from the Japanese word for resonance, inviting guests to slow down and engage with both flavour and sound. The concept blends attentive hospitality with an environment where music plays an equal role alongside food and drinks.

The food menu focuses on Japanese flavours interpreted through classic techniques. Highlights include Chicken Karaage finished with sancho pepper and sesame tare, Nasu Dengaku featuring roasted Japanese eggplant glazed with sweet miso, and Scallop Kobujime, where konbu-cured scallops are paired with yuzu kosho and lemon ponzu.

Cocktails centre on Japanese spirits, with selections crafted to complement the lounge’s curated playlists. Drinks include the refreshing Toki Highball, the citrus-driven Roku Sour accented with matcha and yuzu, and the savoury Dirty Hakutini, combining Haku vodka and sake for an umami-driven profile.

Music programming anchors the experience through Suntory Sessions, featuring live DJ performances every Friday and Saturday evening beginning at 7:00 pm. Guest DJs rotate throughout the run, delivering vinyl-focused sets that span soulful and eclectic sounds, encouraging guests to settle in and enjoy the atmosphere as part of the overall experience.

HIBIKI operates primarily on a first-come, first-seated basis, with limited reservations released periodically. The pop-up reimagines the hotel lounge environment by weaving together cocktails, food, and sound into a cohesive evening destination for guests looking to enjoy a slower-paced night out in downtown Vancouver.
