Nature Meets Nurture: Open-Air Meditation
For the first time, Fairmont Waterfront will debut meditation classes every Saturday morning on the rooftop terrace, with sessions focused on meditation, breath work and movements. Guests will experience gentle, breath inspired movement under the expert guidance of professional instructor, Tianne Allan. This slower paced class is ideal for combating jetlag, finding inner serenity and enjoying the fresh ocean air while visiting Vancouver. Classes are complimentary for hotel guests and take place every Saturday at 8:00 a.m. through the summer and can be reserved in advance by contacting the hotel’s concierge.
Shuck It: Pop-Up Oyster and BC Wine Bar
ARC Restaurant has unveiled a summer pop-up wine and oyster bar, Sip and Shuck. The new pop-up bar invites guests to pull up a seat at the Chef’s Bench for a stimulating tasting experience.
Situated against the breathtaking backdrop of Vancouver’s waterfront, the pop-up spotlights small-batch reserves and exclusive pours, offering a daily rotating selection of unique wines sourced from wineries nestled in the picturesque Okanagan valley.

The Buzz on Bees: Bees & Blooms Tours
Fairmont Waterfront offers seasonal tours of the hotel’s rooftop garden and bee apiary, with tours taking place daily at 3:00 p.m. through August 31. Led by a member of the hotels ‘Bee Team,’ a collection of volunteers from the hotel who are passionate about resident pollinator, guests will experience the wonders of bees up close as they view the rooftop hives, and discover the significance of bees and pollinators to the planet.
Alongside the apiary tour, guests can dine over Executive Restaurant Chef Adam Middleton’s three-course pollinator friendly Province to Plate Menu at ARC, a limited seasonal dining experience available for lunch and dinner that showcases more than a dozen ingredients that require pollination. Guests looking for an extra buzz can also order ARC’s signature cocktail, the Rosemary Gimlet, made with the hotel’s signature Gin in collaboration with Wayward Distillers that uses its rooftop honey as the base in the distilling process.
Alfresco Feasts: Rooftop Garden Dinner Series
Taking outdoor dining to new heights, Fairmont Waterfront, along with industry partners presents a unique alfresco dining series at the hotel’s rooftop garden venue. Set among a canopy of twinkling lights and meticulously manicured gardens, each dinner party in the series promises an evening of culinary delights and thematic immersion. From themed menus inspired by seasonal ingredients to curated beverage selections that tantalize the palate, guests will be transported to a whimsical world of nature’s bounty and gastronomy.
Upon arrival, guests will be greeted with delectable canapes designed by the Fairmont Waterfront’s culinary team, followed by an immersive garden and bee tour led by the resident head gardener Carissa Kasper and chief beekeeper, Julia Common. To follow, indulge in a multi-course dinner featuring wine pairings from top Okanagan wine producers that capture the summer flavours of British Columbia. The Garden Dinner series is available on two evenings: Thursday, July 18, and Thursday, August 22, beginning at 6:00 p.m. with a cocktail reception, followed by dinner.
