Combine Cafe & Bar blends local ingredients with international influences, offering farm-to-table cuisine in Downtown Surrey. The space transforms from a relaxed cafe in the day to a full-service dining venue at night.
The kitchen is led by Head Chef Ocean Yoo, whose experience in Michelin-starred kitchens inspires a menu that highlights local produce and seasonal flavours. Ingredients are sourced sustainably, with many coming from a Southlands Tsawwassen farm. The result is a menu that evolves throughout the year, creating dishes that highlight freshness and innovation.
We visited Combine Cafe & Bar for their dusk menu and here is what we tried.
The braised beef short rib featured tender meat that paired beautifully with the subtle sweetness of the butternut squash purée. The roasted root vegetables added earthy notes, while crispy onions provided a satisfying crunch.
The wild–caught canary rockfish featured delicate fish that was perfectly cooked, with miso and braised daikon adding depth and a hint of umami. Shishito peppers and senbei contributed a unique twist, balancing the dish with a hint of spice and crunch.
For lighter bites, the marinated mixed Italian olives delivered a burst of briny goodness, while the Nori Sushi offered a fresh, hand-folded creation with ahi tuna and gochujang sauce.
The vegan Black Forest cake was impressive with moist layers and a vibrant raspberry coulis, while the seasonal fruit added a refreshing contrast to the rich flavours.
The Karma Mojito was a refreshing non-alcoholic option, with the combination of mint and soda water delivering a light, zesty finish.
From their daytime menu, we tried their Mini Cube Croissants with Matcha, Passionfruit and Tiramisu fillings. These were absolutely delicious: buttery, flaky and smooth fillings that were not overly sweet but satisfying.
