The participating restaurants source their salmon through Organic Ocean, a Richmond-based seafood company that supplies sustainably harvested seafood to restaurants and retailers. Each kitchen has developed a distinct interpretation of Wild BC Salmon using regional produce, sauces, herbs and cooking techniques.
