Notch8 Restaurant & Bar at Fairmont Hotel Vancouver has launched fully refreshed menus across breakfast, lunch, dinner, and Sunday brunch, including a new à la carte brunch offering.

The update marks a new chapter for the hotel’s signature restaurant, with a culinary direction shaped by classic French technique, Pacific Northwest ingredients, and the heritage of one of Vancouver’s most recognizable hotels.
Led by Executive Chef Mike Reid, the refreshed menu draws from the history of Fairmont Hotel Vancouver while giving the restaurant a current West Coast point of view. The hotel’s Château-style architecture and railway-era history are reflected in the dining room experience, with dishes that connect French tradition with regional sourcing.
Across the new menus, seafood plays a central role. Seafood Chowder is built on crab bisque with prawns, salmon, and mussels, while Steelhead and Scallops Grenobloise brings together Pacific Northwest seafood with a French preparation.
Several classic dishes remain part of the restaurant’s culinary direction, including Duck À L’Orange, Foie Gras and Fig Terrine, and Steak au Poivre. The menu also includes contemporary West Coast dishes such as Bison Cru and a reworked Tuna Niçoise with seared ahi.
The refreshed daypart menus include shareable plates, mains, desserts, and cocktails. Guests can expect dishes such as Mussels Frites and Baked Brie en Cocotte, along with nostalgic desserts including Baked Alaska and Gâteau Basque.
The bar program has also been updated to reflect the hotel’s history, with cocktails inspired by pre- and post-prohibition classics. The drinks menu takes cues from different eras of the hotel while keeping the overall experience connected to Notch8’s railway and Château-style identity.
For guests looking for a more involved dining experience, the À Toi! tasting menu offers a curated multi-course meal led by the kitchen.
