ARC Restaurant at Fairmont Waterfront is introducing a new seasonal dining series in Vancouver, bringing guests to the Chef’s Bench for an intimate family-style dinner built around local ingredients.

The new experience, called Led by a Love of, is designed for groups of 6 to 12 guests. Led by Executive Chef Harris Sakalis, the series follows ARC’s West Coast approach to land and sea, with menus that change according to the season and the ingredients available from local suppliers, farms, and producers.
The series begins on May 28 with Led by a Love of Spot Prawns, a one-night dinner highlighting B.C. spot prawns across a five-course menu. The dinner will include Spot Prawn Tartare, Spot Prawn Orzotto, local caviar, and a family-style main course featuring spot prawns cooked over a charcoal grill.
Where possible, dishes will also incorporate herbs, fruits, and vegetables harvested from Fairmont Waterfront’s rooftop garden. Guests can expect each course to be introduced tableside by Chef Sakalis, with notes on the inspiration behind the dishes and the local ingredients used throughout the menu.
Following the spot prawn dinner, Led by a Love of Spring will continue through June. This edition will feature seasonal B.C. ingredients such as locally foraged morel mushrooms, asparagus, spring lamb, and Pacific Northwest halibut.
The summer edition, Led by a Love of Garden, will take place in Fairmont Waterfront’s rooftop garden. The four-part series will begin with a garden-to-glass cocktail and honeybee encounter before guests sit down for a multi-course Province to Plate menu. Each evening will feature a different B.C. wine partner, with curated wine pairings served throughout the dinner.
Later editions, Led by a Love of Harvest and Led by a Love of Wild, will continue the series into the fall with menus inspired by the ingredients and flavours of the season.
