Tucked inside the iconic Century Plaza Hotel in Downtown Vancouver, C|Prime combines the feel of a New York steakhouse with the warmth of Italian dining.

Executive Chef Behshad Zolnasr’s menu focuses on Italian comfort and West Coast ingredients, creating a space that feels polished but also welcoming. Here are some fall menu highlights.

We started with the Tonno Tartare, a bright mix of tuna, avocado, and cucumber with touches of lime and soy. The wasabi foam added a gentle kick, and the squid ink tuile gave a crisp textural contrast that made each bite more interesting.

The Fettuccini El Burro featured house-made fettuccine coated in butter emulsion and finished with truffle espuma and shaved truffle. It was aromatic and rich without feeling heavy.



The 16 oz. Bone-In Ribeye arrived perfectly seared and tender. The Potato Rösti side had crisp edges and paired with roast garlic aioli. The Mushroom Risotto was creamy and earthy, a natural complement to the steak’s richness.





Dessert stayed classic with the Tiramisu. Layers of espresso-soaked ladyfingers and mascarpone carried a light touch of coffee liqueur and vanilla, balanced and not overly sweet.


For drinks, the MULO brought a refreshing mix of ginger beer and peach syrup, while the 1919 Classico Negroni with Sheringham Gin, Antica Vermouth, and Campari offered that familiar bitter-smooth balance.
