the apron at The Westin Wall Centre Vancouver Airport has introduced a new brunch menu created by Executive Chef Clement Chan.


Brunch is offered daily from 10 AM to 4 PM and features West Coast dishes prepared with seasonal ingredients from local farmers, foragers, and fishers, with Ocean Wise seafood on the menu.
The dishes range from classic breakfast plates to French-inspired options, burgers, and refined mains. Diners can choose from eggs, bacon, and toast combinations, savoury plates such as Croque Madame, French Omelette, or Smoked Salmon Dutch Baby, and sweet choices including Brioche French Toast. There are also heartier selections like The Wall Smash Burger, Mushroom Gnocchi, Ragù Bianco, and Black Cod. The Eat Well section offers lighter items such as broccolini, salads, hummus, and whole wheat pasta with shrimp.
Brioche French Toast
The brioche was soft with a light crust, pairing well with the anglaise and maple syrup. Seasonal berries and berry compote gave the dish a bright, tart finish, while chantilly and house-made streusel brought sweetness and texture.



Smoked Salmon Dutch Baby (Ocean Wise)
The puffed pancake had crisp edges while the house-smoked salmon was balanced by arugula and pickled red onions, with capers adding a briny note.



The Wall Smash Burger
A classic smash burger with a juicy patty, smoked bacon, caramelised onion, and aged cheddar. The house aioli tied the flavours together, and the fries on the side were golden and crisp.


Black Cod (Ocean Wise)
The cod was cooked gently, served with a parsley velouté that added a smooth herbal element. Vegetables like leeks, celery root, and zucchini offered freshness on the plate.

Ragù Bianco
The handmade tagliatelle had good bite, carrying the flavours of pork, fennel, and broccoli rabe. The reggiano emulsion added richness, and herb oil gave the dish an aromatic lift.

Mushroom Gnocchi
The gnocchi were soft and pillowy, paired with local mushrooms that gave an earthy flavour. The truffle and espuma brought extra aroma, with grana padano adding a savoury finish.
