Thanksgiving Buffet at Hyatt Regency Vancouver [Recap]

Hyatt Regency Vancouver hosted a delightful Thanksgiving buffet, featuring an impressive array of dishes, from cold salads to hot mains and a variety of desserts, making it a memorable festive meal.

The cold station featured Waldorf Salad, a refreshing blend of celeriac, apple, and walnut, complemented by radicchio and leafy greens with parmesan cheese and a tangy apple cider vinaigrette. Another cold option, the Cinnamon Nutmeg Spiced Sweet Potato Salad, offered a seasonal combination of dried cranberries, green beans, and maple vinaigrette, while the Roasted Beet Salad was paired beautifully with goat cheese crumble and truffle vinaigrette.

The hot station provided comforting options like the creamy Butternut Squash Bisque and Roasted Root Vegetables with Crispy Brussel Sprouts and Bacon. I really enjoyed the savoury Wild Mushroom Ravioli with Truffle Cream Sauce, which was a rich and satisfying dish. The traditional Sage Brined Roasted Turkey was served with cranberry sauce and turkey gravy, perfectly complemented by Mosaic Signature Bread Stuffing and the silky Creamy Roasted Garlic Potato Puree.

At the carving station, the Porcini Dusted Striploin was a hit, served with classic Yorkshire pudding, au jus, and sides of horseradish and grainy mustard. For seafood lovers, the action station featured Sautéed Prawns in a lemon butter white wine sauce, adding a touch of elegance to the meal.

For dessert, guests enjoyed traditional Pumpkin Pie, individual bread pudding with anglaise, assorted petite fours, fresh fruit, tarts, and beignets.
