At this year’s Whistler Cornucopia, I attended a culinary stage brunch featuring Executive Chef Bruce Worden. As the General Manager and Executive Chef at Milestones, Bruce brings decades of expertise, blending his Niagara roots with Whistler’s dynamic food scene.

The brunch offered four thoughtfully crafted courses. The first course combined maple, candied orange and bacon, balancing sweet and savoury flavours to start the meal.

The second course was seafood benedict with a velvety hollandaise sauce and a touch of dill.

The third course was chicken and waffles, paired with hot honey for a perfect mix of crispy, tender, and spicy notes.

To finish, there was a refreshing white chocolate, cinnamon and blackberry dessert.
