David Provençal, Executive Chef
Executive Chef David Provençal, a seasoned culinary professional with over a decade of experience, leads Ombré’s kitchen. David’s journey began with professional cooking training in Quebec. His career includes roles at prestigious establishments like Manoir Rouville-Campbell, Restaurant Au Pied de Cochon, and Restaurant Le Globe in Montréal. David’s recent roles in Tofino at Ice House Oyster Bar, where he was Executive Chef, and at Wolf in the Fog, where he spent the last eight years as Sous Chef, highlight his innovative approach to West Coast cuisine. His culinary expertise will push boundaries and delight diners at Ombré.
Eric Murdoch, General Manager
Eric Murdoch, a hospitality veteran with over 15 years of industry experience, leads Ombré’s operations as General Manager. Eric’s career includes key roles at acclaimed establishments such as Cliff’s Edge Restaurant, Kismet Restaurant, Gjusta Bakery, and L & E Oyster Bar in Los Angeles. Most recently, Eric worked at Wolf in the Fog in Tofino, BC as a front of house team member where he was able to put his Level 1 Master Sommelier certification to use recommending wines to restaurant patrons. His passion for hospitality and commitment to excellence will drive Ombré Restaurant to new heights.
Joel Ashmore, Executive Pastry Chef
Joel Ashmore, Ombré’s Executive Pastry Chef, brings over a decade of pastry arts experience. Joel has held prestigious positions at the Wickaninnish Inn, Nita Lake Lodge, and Nimmo Bay. As the former owner of Wildflower Cafe in Port Alberni, Joel showcased his entrepreneurial spirit and pastry expertise. His innovative dessert creations promise to delight patrons at Ombré.
Jonathan Carlile, Assistant General Manager
Jonathan Carlile serves as Assistant General Manager overseeing the bar program at Ombré. With nearly 15 years of experience, Jonathan has excelled in roles such as General Manager and Wine Director at Bacaro Restaurant and Wine Bar, and Bar Manager at Restaurant Pastel in Montreal. His expertise in wine service, cocktail bartending, and team-building will shape Ombré’s bar program, ensuring a welcoming and engaging experience for all guests.
