Finding nice beaches in Canada is a tough endeavour, and at times, even unrealistic. However they refuse to let this minor speed bump dampen our summer aesthetic. Instead, let these Sand Dollar Cookies transport you to the waves of your favourite destination or elevate any beach-themed party.

Ingredients
- 1 cup unsalted butter, softened
- 2/3 cup granulated sugar
- 2 egg yolks (reserve the whites)
- 2 teaspoon vanilla extract
- 1 teaspoon almond extract
- 2 cups all-purpose flour
- 1/2 teaspoon Fleischmann’s Baking Powder
- 1/4 teaspoon salt
- Cinnamon sugar, for topping
- Slivered almonds, for topping
Directions
- In a large mixing bowl cream together the butter & sugar until fluffy, about 2 minutes. Add the egg yolks, vanilla & almond extract. Beat until combined.
- Sift in the flour, baking powder & salt. Continue mixing on low speed until dough comes together.
- Shape into a disc, wrap in plastic wrap & refrigerate until firm.
- Preheat the oven to 375(f) degrees. Line 2 baking sheets with parchment paper.
- On a lightly floured surface roll out the dough to ¼ inch thick. Slice into 24 rounds using a biscuit cutter & transfer to the prepared baking sheets.
- Brush the tops lightly with the reserved egg whites & sprinkle generously with cinnamon sugar. Gently press in slivered almonds in the pattern of a sand dollar.
- Bake for 6 to 8 minutes, until golden & cooked throughout. Let cool completely before removing from the baking sheet.
