Hush Coffee Vancouver: Oden and Yaki Onigiri Brunch

A while back, I stopped by Hush Coffee (the daytime concept for COFU Chinatown) for brunch and tried their Oden and Yaki Onigiri brunch plate, a quietly comforting meal rooted in Japanese home cooking.

Oden is a nourishing, Japanese hot pot made with a light soy based broth, slowly simmered so each ingredient absorbs flavour over time.

At Hush Coffee, the oden included daikon radish, corn, mochi, carrot, konjac noodle, lotus root, burdock, and deep fried tofu, all served warm and gently seasoned.

The grilled onigiri added contrast, lightly crisp on the outside with a soft centre, simple to pair alongside the oden.

The flavours stayed subtle and balanced, the kind of brunch that encourages a slower pace.

I finished with dango topped with red bean paste, a classic, understated dessert that rounded out the experience along with a latte.

It was an easy, comforting brunch that fit naturally into a relaxed experience at Hush Coffee.
