Hawksworth Restaurant is thrilled to announce an exciting collaboration dinner with esteemed Montreal chef Marc-André Royal on Tuesday, April 16th. This extraordinary culinary event will bring together the talents of Chef David Hawksworth, Chef Sylvain Assie, Chef Marissa Gonzalez, and Chef Marc-André Royal for an unforgettable dining experience.

The collaboration dinner, priced at $198 per person including taxes and gratuity, will feature a meticulously crafted seven-course menu showcasing the finest seasonal and locally sourced ingredients. Guests will have the opportunity to indulge in exquisite dishes such as snow crab & nordic shrimp, watercress velouté and roasted rabbit saddle, sweetbreads cotechino, fiddlehead, morel sauce, expertly prepared by the culinary maestros. To enhance the dining experience, optional wine pairings, thoughtfully selected from Hawksworth’s renowned wine list by esteemed sommelier Chris Reilly, will be offered. The dessert course, lemon tart, elderflower ice cream, toasted meringue, will be masterfully created by pastry chef Marissa Gonzalez.

Chef Marc-André Royal, a Montreal native, has made a name for himself in the culinary world with his exceptional Canadian cuisine. Having previously worked alongside Chef David Hawksworth at BC’s leading Top Table Group, Chef Royal has since established his own successful ventures, including the acclaimed Le St-Urbain and La Bête à Pain. Known for his emphasis on seasonal, fresh, organic ingredients, as well as sustainably harvested fish, Chef Royal’s culinary creations are a true reflection of his passion and expertise.
