Copperpenny Distilling Co. in North Vancouver is partnering again with downtown seafood destination Fanny Bay Oyster Bar and Shellfish Market to host a new round of Sunday oyster and cocktail pop ups this spring.

The events take place from 2 to 7 p.m. on March 22, April 12, May 10, and May 31 at Copperpenny’s Lower Lonsdale distillery lounge, welcoming guests to enjoy freshly shucked oysters alongside gin based cocktails crafted specifically for the occasion.
Fanny Bay master shucker Hannah Nguyen will serve rotating premium oyster selections, offered at $21 for a half dozen and $39 for a dozen, while Copperpenny’s bar team presents cocktails highlighting the distillery’s house spirits.
The pop ups also spotlight No. 006 Oyster Shell Gin, created using oyster shells sourced from Fanny Bay’s Vancouver Island farm, resulting in a savoury gin accented by bright citrus notes that work well in martinis and seafood friendly cocktails.
Guests can also try expressions including Lost Horizon Rare Tea Gin, which incorporates rare loose leaf Ceylon tea to produce floral and vanilla notes with a distinctive amber hue, and Ember BC Pine Smoked Gin, crafted with coastal pine smoke and botanicals that reflect West Coast influences.
Reservations are recommended as previous editions filled quickly, and guests can secure spots by contacting the distillery directly ahead of each event date.
