Fairmont Waterfront’s ARC Restaurant has partnered with Vancouver’s HYPE Chocolate to present a limited-time Artisanal Ice Cream Pop-Up next to ARC Patio. Running weekends from 11 a.m. to 7 p.m. throughout July, August, and into mid-September, the downtown Vancouver collaboration celebrates local ingredients and coastal indulgence.


Founded in 2022 by Scott Symons and Marlayna Pincott, HYPE Chocolate has gained attention for its inventive flavours and focus on sustainability. Their cacao is sourced through Cocoa Horizons, aligning with Fairmont Waterfront’s own eco-conscious practices, including their Green Key Global 5 Green Key rating.



Three feature flavours launch the pop-up. The Lemon, Wildflower Honey & Thyme Sorbet is a nod to the hotel’s rooftop garden and bee apiary. The Salted Chocolate Ice Cream, made with sea salt from Vancouver Island, reflects the hotel’s coastal influence. Rounding out the menu is a decadent Vanilla Bean & Brown Butter Croissant flavour topped with edible gold.







Visitors can also try HYPE’s seasonal B.C. berry cups with warm chocolate, a summer-ready dessert combining freshness with rich flavour. A rotating list of additional flavours will be offered in the coming weeks.


Located steps from Canada Place, Fairmont Waterfront combines luxury and sustainability with its rooftop apiary, seasonal menus, and wellness programming. Through this collaboration with HYPE Chocolate, ARC Restaurant continues to integrate community-focused partnerships into its culinary programming.
