I had an amazing time at the Araxi x Quails’ Gate Winery Dinner at Cornucopia in Whistler and here are some highlights from this wonderful evening:



1st Course
Fresh East Coast Scallop: Wise Earth Farm ginger compressed pear, winter radish, cilantro seed dressing, buttermilk panna cotta. Wine Pairing: Chenin Blanc, 2009.


2nd Course
House Smoked Tofino Salmon: Rootdown Farm beets, beet salsa, yuzu, crème fraîche. Wine Pairing: Dry Riesling, 2017.


3rd Course
BC Spot Prawn + Lobster Ravioli: Local sea urchin, North Arm Farm carrots, lemon, and herb butter. Wine Pairing: Stewart Family Reserve Chardonnay, 2016 & Stewart Family Reserve Chardonnay, 2021.


4th Course
Thiessen Farm Quail en Brioche: Roasted breast, foie gras mousse, caramelized pumpkin, black quince, shimeji mushroom, quail jus. Wine Pairing: Stewart Family Reserve Pinot Noir, 2016 & Stewart Family Reserve Pinot Noir, 2022.


5th Course
Peace Country Lamb: Grilled rack, celeriac hummus, harissa carrots, pine nut dukkah, lamb jus. Wine Pairing: The Boswell Syrah, 2015.



Dessert
Caramel Mousse + Okanagan Apples: Caramel glaze, mascarpone ice cream, toasted oats. Wine Pairing: Optima, 2017.
