New Fuji is a fun and delicious Japanese spot in Vancouver with a retro-chic decor and on their menu are sushi, udon, robata and more. We visited them for the second time and tried some of their most popular offerings.
To start, there was the Fluffy “Rare” Unagi Omelette featuring fresh Water Eel cooked to “rare.”
The Wagyu Long Yukke Sushi is shareable-sized pressed sushi topped with raw beef seasoned with shiso chimichurri with rice cracker bits, chopped onions, and apples.
We reallly enjoyed the Bluefin Negitoro Long Pressed Sushi which is bluefin tuna with rice cracker bits, chopped onions, and apples on sushi rice with a layer of with shiso chimichurri.
There was the Snow Crab, Scallop and Crab Miso Cream Udon with a crispy scallop topping.
The Abalone Kamameshi Rice is served in a traditional rice pot. The rice is mixed in front of you with abalone, bamboo shoots, king oyster mushroom, and a kansai dash broth.
There was also the Pork Wrapped Lettuce with sweetened soy-based Japanese BBQ sauce.
The Cheese Tofu featured a house-blend of cheese dip topped with maple syrup and figs, served with buttered crostinis.
The Day-Aged Squid with sweetened soy-based Japanese BBQ sauce and gorgonzola Caesar dressing was delicious.
We finished off with the Tiramisu Parfait Alle Fragola, which is a luscious layered dessert with a base of cocoa cookie crumbles and covered with a tart strawberry sauce and topped with a tiramisu-inspired mascarpone.
We also had a tasting of their various mojitos or mocktail versions including Peach Passion, Strawberry, Yuzu Gelato, Fresh Shiso and Tomato.
My favourites were the Wagyu Long Yukke Sushi, Bluefin Negitoro Long Pressed Sushi, Snow Crab, Day-Aged Squid and Scallop and Crab Miso Cream Udon. I was really surprised by the Cheese Tofu, which turned out delicious for me.
New Fuji has a unique retro-chic interior which makes it a fun and interesting spot to dine.
