Pinche Taco Shop by La Taqueria is a new Downtown Vancouver taqueria on Seymour Street which opened in November 2025, expanding on the long running presence of La Taqueria in the city.

The kitchen is led by Executive Chef Maria Ponce.

The menu centres on a focused list of tacos and burritas (tortilla with protein and no rice or other fillers), along with a few starters and one dessert. The offerings stay close to traditional Mexican preparations, with an emphasis on grilled meats, slow roasted cuts, vegetables, and house made salsas. Flour tortillas are used throughout, folded into burrita-style or wrapped around fillings for the trompo and vegetable based tacos.

To start, there was the Guac & Chips. The guacamole was freshly prepared and kept simple, allowing the flavour of ripe avocado to come through. The chips were crisp and sturdy, making them easy to share as a starting plate.

The Burrita De Lechon featured charbroiled suckling pig with salsa habanero tatemado and pickled onion in a folded flour tortilla. The pork was tender with light char, and the salsa added warmth without overpowering the meat. The pickled onion brought acidity that kept the bite balanced.

The Trompo De Sirloin arrived filled with shaved sirloin, cheese, onion, cilantro, and salsa morita. The beef carried a steady savoury flavour, while the morita added gentle smokiness. The melted cheese softened the texture, and the fresh herbs kept the taco from feeling too rich.

The Acelga Con Huevo offered a unique combination of Swiss chard, onion, fried egg, and salsa matcha. The greens were cooked until tender, and the yolk added richness to the tortilla. The salsa provided a mild, nutty heat that tied the elements together.

Dessert was the Volcan De Dulce De Leche, a warm lava-style cake with a flowing dulce de leche centre, served with vanilla ice cream and house crumble. This was a more unique take compared to the classic Chocolate Lava Cake.

Washed it all down with some agua frescas.

The space is bright and lively, designed for counter service while still encouraging guests to sit and take their time over tacos and drinks.
