C|Prime Unveils New Summer Menu Inspired by BC’s Best

C|Prime Modern Italian Steak & Wine has launched a new Summer Menu that highlights seasonal ingredients from across British Columbia. Located in the Century Plaza Hotel in Downtown Vancouver, the Italian steakhouse is known for its balance of prime cuts, handmade pasta, and refined yet approachable dishes.

Executive Chef Behshad Zolnasr brings a West Coast lens to Italian-inspired cooking with menu additions that include Baccala Mantecato with smoked cod and roe, Saffron Arancini with sweet corn purée and basil aioli, and Osso e Manzo, a rich plate combining colossal bone marrow and filet tartare.

New pastas include Pasta alla Nerano with zucchini pesto and pistachio, Short Rib Ravioli with truffle demi-glace, and Lobster Tagliatelle, served with a bisque reduction and squid ink tuile. The menu also features Halibut with smoked carrot purée and fava ragu, Lamb Shank with rosemary mashed potatoes, and a Prime Burger topped with confit garlic aioli and crispy onions.

Prime beef options remain central to the C|Prime experience. Diners can select from a curated range of cuts including Alberta’s Northern Gold, Angus Reserve, PEI’s Blue Dot, and Australia’s King River Wagyu, with options ranging from a 6oz flatiron to a 50oz Tomahawk.

C|Prime is open daily for breakfast, lunch, Happy Hour, and dinner. Small plates, wines by the glass, and local and imported beers are available during Happy Hour from 3 to 5:30 p.m. and again from 10 p.m. to close.
