Recently named a finalist for ‘Best Restaurant for a Stiff Drink’ by readers of the Georgia Straight in its 2023 Golden Plates Awards, the Cascade Room’s new list of handcrafted cocktails comes courtesy of GM and Bar Manager Karen Burton and gives libation lovers plenty of ways to quench their summer thirst in the Cascade dining room or on its Main Street patio.

Available nightly beginning at 4 p.m., the Cocktail list includes highlights such as the spicy and refreshing Tex Mex Martini, juicy and savoury Blind Melon, and bright and punchy Cherry Bomb; among others.

Burton and her team will also help patrons make pitcher-perfect memories during longer summer nights and sunny weekends on Cascade’s double patio on Main Street by pouring pitchers of Rosé Sangria and Pimm’s Cup.

In the kitchen, Head Chef Darrel Ahenakew has added a fresh summer spin to the Cascade Room’s Dinner menu, including a show-stopping culinary creation that benefits a local cause.

Five dollars from each order of his Leek Ash-Rubbed Steelhead Trout (three sisters mash of roasted corn, grilled zucchini & cedar-braised white beans, charred leeks, sage & sunflower seed pesto, baked bannock, cranberry chutney) will be donated to Community Builders, a supportive housing provider in Vancouver’s Downtown Eastside.
